What is wilson silverleaf? We're organitarians; it's best for our bodies and the planet. We cloth diapered Nina for the same reason. We drive a hybrid car & wish we could afford solar panels on our house. I'm a strong advocate for homebirth, full-time mom, & also a movie junkie. We don't have a tv though; we watch dvds on our computer. We love contradancing. I garden & knit; Larry's a puzzle lover & plays fantasy football.

deicious dinner

One of my favorite meals to make is my special tilapia in coconut milk. It's super easy and quick but not very photogenic so I didn't take a pic.
preheat oven to 350 and start a pot of brown rice--I always make 2 cups because I don't mind having extra rice
4 tilapia filets
1 can organic coconut milk
1 organic lemon
2 tbs Frontier oriental sauce mix (but I am not going to use it after what I have is gone because it's not organic and it's fine without it, I might use instead their oriental seasoning mix)
1 bunch of organic greens (I used chard but any will work)

Chop the greens fine and put them in the bottom of an oven-safe dish that has a lid. I use a Le Creuset knockoff that I got at Target but whatever you have will be fine. It doesn't need to be super deep. Lay the fish on top of the greens. Mix the coconut milk, juice of the lemon, and sauce mix in a bowl with a whisk; pour over fish. Cover and bake about a half an hour. Serve with rice.

For dessert tonight we had whipped cream and strawberries. We had some strawberries left over from last week's CSA box and I also had some Organic Pastures raw cream that might not have been good in a day or two. So it was really the only thing to do.

That's so funny that we both cooked Talapia on the same night. Your recipe sounds great. I might have to try that next time.
